Technically Montilla Moriles rather than Jerez/sherry demonination, Toro Albala winery and Antonio Sanchez, its winemaker, produce some of  the best Pedro Ximenez (PX) wines you will find. Antonio will only use the best grapes in his Don PX Gran Reserva because the wine is destined for long maturation.  The ripe yellow bunches of PX grapes are hand-picked and dried on special mats until they shrivel to raisins. Don PX 1982 is an aged vintage PX, a rich, chocolatey sweet wine that will often be matched with Christmas pudding in UK, but is the definitive match with chocolate. Apparently it also makes the superlative “pour over” for vanilla ice cream!

“Deliciosa” is produced using the traditional Solera method of ageing in Sanlucar de Barrameda. Here the gentle sea breazes help to give this wine a very dry, light, crisp and slightly salty flavour. It is ultra delicate and one of the finest Manzanilla`s produced. Excellent with cheese and anchovy-palmiers, olives & salted almonds.
